Cucina on Hay is an Italian-inspired dining venue within Mercure Perth, designed by BrandWorks around the "La Dolce Vita" philosophy. The space recreates an Italian alimentari with a full-ceiling skylight flooding the interior with natural light, tumbled terracotta tiles, angled wooden beams, ivy-covered wall trellises, and a speckled terrazzo deli counter.



The warm palette of terracotta and olive tones creates a comfortably casual atmosphere — relaxed café by day, candlelit dining by night. The menu blends traditional Italian recipes with premium WA ingredients, featuring house-made pasta, gourmet pizzas with San Marzano tomatoes, and Italian charcuterie sourced from local artisan producers. With flexible seating, a dedicated events team, and direct street access from Hay Street, Cucina on Hay suits everything from team brunches to intimate celebration dinners.

The full alimentari space - a skylit dining room with terracotta tiles, wooden beams, and flexible seating arrangements. Tables can be configured for intimate dinners, long shared lunches, or standing cocktail events for up to 70 guests.

The kitchen at Cucina on Hay runs on one principle: keep it honest. Pasta is rolled by hand each morning. Pizza dough proves overnight and meets San Marzano tomatoes in a wood-fired oven. Charcuterie boards are assembled with care, not haste.
The menu is Italian in spirit but built on Western Australian produce — seasonal vegetables from local growers, seafood from the coast, and olive oil pressed in the regions south of Perth.
